Kangaroo has been a protein staple in Australia for as long as 20,000 years, thanks to being high in protein, low in fat (less than 2%) and offering health benefits from essential B vitamins, zinc, iron, and even Omega 3s, normally associated with fish. But most of all, it’s full of flavor, often described as somewhere between beef and venison, and stands up deliciously to our Teriyaki-based marinade. We marinate kangaroo for two days to ensure tenderness, in a recipe of teriyaki, wine, sugar, salt, onion, lemon, and other natural flavors. Then we prepare it with minimal processing and package it with no artificial flavors or preservatives. The result is a bold, earthy flavor, with a touch of sweetness, and a texture similar to that of beef or bison jerky.
