Buffalo’s not only leaner than beef (while packing more protein than chicken) but it’s also subtly sweeter, which makes it the perfect base for our special hot recipe. We marinate the buffalo for two days in our own all-natural, no preservatives, pepper sauce. Most of the heat comes from red chili peppers and habanero peppers, which provide between 100,000 and 250,000 Scoville units of heat, while brown sugar, pineapple, and touch of honey complement the light buffalo flavor.
