Snapping Turtle Jerky

Ask three people what snapping turtle tastes like, and you may get four answers. That’s because its flavor ranges from pork to shrimp, or veal to fish,  epending on which part of the turtle you’re enjoying. The texture also varies, reminding some of lobster and others of veal. To deliver a consistent, sweet and slightly tangy Snapping Turtle Jerky, we marinate fresh turtle for two days to ensure tenderness, in a recipe of teriyaki, wine, sugar, salt, onion, lemon, and other natural flavors. Then we prepare it with minimal processing and package it with no artificial flavors or preservatives. The result is a bold, slightly game-forward flavor, with a touch of sweetness, a chewy texture, and a sweet- savory glaze.
